Restaurant Inspections: Five Guys and Famous Dave’s

The most recently available restaurant inspection reports from Jan. 29 to Feb. 6 in the Chantilly and Centreville areas.

In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy-to-see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

CiCi’s Pizza
14392 Chantilly Crossing Lane
Date of inspection: Feb. 5
Critical (corrected during inspection): There is no Certified Food Manager present at the beginning of the inspection.

Five Guys
14421 Chantilly Crossing Lane
Date of inspection: Feb. 5
Critical: Facility had handouts from last inspection however, manager was relatively new to store and was unsure when/if material had been reviewed with employees, agreement form were not signed. One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.

Uptown Cafe
5870 Trinity Pkwy
Date of inspection: Feb. 4
Critical (corrected during inspection): The person in charge failed to state the required temperatures and holding times for the potentially hazardous food items when hot holding or cold holding.
Critical (corrected during inspection): Employee started to put on gloves without washing hands first.
Critical (corrected during inspection): It was observed that food handler was holding and slicing cucumbers with bare hands.
Critical (corrected during inspection): After discussing with person in charge, it was determined that foods on the steam table are not heated on the stove, but warmed on the steam table.
Critical (corrected during inspection): Bleach and detergent were observed stored on the wash drain board.
Non-critical (corrected during inspection): When instructed to wash hands prior to donning gloves, employee started to wash at the 3 vat sink.
Non-critical (corrected during inspection): There were no paper towels at the hand sinks.
Non-critical (corrected during inspection): Observed the following food thawing using an improper method: 1) ground beef rolls; 2) meatballs. Items were sitting outside refrigeration cooling at room temperature.
Non-critical (corrected during inspection): Employees are not aware of or are not using suitable utensils with ready-to-eat food to prevent cross-contamination.
Non-critical: There were no test strips for monitoring the concentration of the chlorine sanitizer solution.

Famous Dave’s
14452 Chantilly Crossing Lane
Date of inspection: Feb. 4
Non-critical (corrected during inspection): Surfaces of ice machine and enclosed components of equipment are not being cleaned as required.
Non-critical (corrected during inspection): The cutting board(s) along the cookline are heavily scratched and scored. The food contact surface is no longer easily cleaned and sanitized due to condition.
Non-critical: Observed that the grout around the floor tiles in the kitchen is worn out and needs to be redone. Areas of floor have water accumulating in crevices.

Subway

Date of inspection: Feb. 4
Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.

Quizno’s
14401 Chantilly Crossing Lane
Date of inspection: Jan. 31
Critical (corrected during inspection): One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Non-critical: The sink basin at the front counter is slow to drain.

Jerry’s Subs & Pizza
13916 Lee Jackson Memorial Highway
Date of inspection: Jan. 30
Critical (corrected during inspection): Raw animal food stored over ready-to-eat food in the refrigeration unit.Raw shell eggs (employee food) was observed stored over covered containers of cut tomatoes, cut onions. Eggs were moved to a lower shelf by CFM.
Non-critical (corrected during inspection): Methods used for cooling were not adequate to facilitate proper cooling.
