Restaurant Inspections: Longhorn Steakhouse and Little Italy Deli

The most recently available restaurant inspection reports from Dec. 7 to Dec. 19 in the Chantilly and Centreville areas.

From Dec. 7 to Dec. 19, the state health department inspected a few restaurants in the Chantilly and Centreville areas. For prior restaurant inspection reports, click here.

In Virginia, restaurant inspection reports aren't quite as simple as getting a letter grade or an easy-to-see number rating to post in the front window.

That said, we all want to know how our favorite restaurants stack up on cleanliness and sanitation. Inspectors grade restaurants based on critical and non-critical violations.

A "critical violation" is one that "poses a direct or immediate threat to the safety of the food being served." Non-critical violations are generally related to cleaning or maintenance.

"Ideally, an operation would have no critical violations, or none which are not corrected immediately and not repeated. In our experience, it is unrealistic to expect that a complex, full-service food operation can routinely avoid any violations," according to Virginia Department of Health's website.

The site continues: "Keep in mind that any inspection report is a 'snapshot' of the day and time of the inspection. On any given day, a restaurant could have fewer or more violations than noted in the report. An inspection conducted on any given day may not be representative of the overall, long-term cleanliness of an establishment."

Below, find the latest restaurant inspection from the Virginia Department of Health. These inspections reflect visits from inspectors during the last few weeks. Some of the violations were corrected immediately during the recent inspections.

Coyote Grille
14101 Saint Germain Drive
Date of inspection: Dec. 19
Critical (corrected during inspection): The person in charge failed to state the minimum cook temperatures and times for potentially hazardous foods.
Critical (corrected during inspection): One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): An employee observed reusing the same gloves to taste food and observed finger to mouth contact while tasting.
Critical (corrected during inspection): A food employee failed to wash his or her hands before engaging in food preparation, after touching bare human body parts, after coughing, sneezing, eating, after handling soiled utensils, or after engaging in any activity that could contaminate the hands.
Critical (corrected during inspection): When tested, the quaternary ammonium compound-based sanitizing solution was observed to be at a concentration less than what is required for effective sanitization of food-contact surfaces of equipment and utensils.
Critical (corrected during inspection): Cooked potentially hazardous foods are not being adequately cooled from 135 degrees to 70 degrees within two hours rice cooling for three hours in the walk-in cooler observed at 88 degrees.
Non-critical: Absence of no-smoking signs or international no-smoking signs in non-smoking area.

Critical: One or more of the elements of an effective employee health policy is either missing or incomplete. A complete employee health policy is required to be in place at the food establishment.
Critical (corrected during inspection): Employees' medicines are not properly located to prevent contamination of food and food contact surfaces.
Critical (corrected during inspection): Observed that poisonous and toxic materials are not properly stored to prevent the contamination of food, equipment, utensils, linens or single service items. Can of WD40 observed on shelf above prep table, near reach-in refrigerators.
Non-critical (corrected during inspection): The inside of the microwave oven is observed soiled.

Bonefish Grill

Date of inspection: Dec. 18
Critical: Fish offered for service or sale in the ready-to-eat form was not observed with written confirmation that fish were frozen to ensure parasite destruction.
Critical (corrected during inspection): The tags for the molluscan shellfish are not being retained for 90 days. Observed no shellfish mussel tags for the months of September, October or November 2012. Per manager on duty mussels were served/sold during these months.
Critical (corrected during inspection): Tags are removed from containers once mussels are moved from walkin cooler to cookline coolers.
Critical: A review of the daily special menu with the foodservice operator indicates that there is no consumer advisory for the Atlantic salmon that may be served raw and/or undercooked.
Non-critical: The farm-raised salmon served raw or partially cooked were observed without a written statement from the supplier stating that the fish were raised and fed according to 3-402.11(B)(3).

Critical (corrected during inspection): Refrigerated, ready-to-eat, potentially hazardous food that is commercially processed is not used or discarded within 24 hours of when the original container was opened and is not observed to be date marked.
Non-critical: Milk crates found used to elevate bottles of oil next to the fryer.
Non-critical: Observed 21 seats in an establishment with one unisex restroom.

Critical: Observed the pre-wash spray hose to extend below the flood rim level of the sink basin at the pots and pans dishware area.
Non-critical: Farm-raised fish served raw or partially cooked were observed without a written statement from the supplier stating that the fish were raised and fed according to 3-402.11(B)(3).
Non-critical: The door handle of a refrigerator near sushi prep was broken.
Non-critical: Observed that an area is not designated for employees to eat, drink, and use tobacco. Observed employee mugs/cups stored in prep refrigerators.

Critical: When tested, the low temperature, chemical sanitizing warewashing machine at the bar was observed with a sanitizing rinse concentration of less than 50 ppm chlorine solution.
